Umeboshi puree is made from salty pickled plums. Which contain shiso leaves to add a reddish colour and natural flavouring. Made by removing ume plum seeds and mashing the meat of the plum, it is used as a seasoning in cooking and can be used to make sushi, rice balls and a variety of delicious dips, salsa, sauces, salad dressings and seasoned vegetable dishes. Imparting a delicious tomato-like flavour, it also makes great tofu ricotta and is great on sweet corn.
